For years I've been running an Alesis QX49 into Windows via a couple vst hosts (e.g. savihost). I need to move that laptop to Ubuntu, and am looking at Yabridge as essentially a vsthost. Basic question: will Yabridge allow me to connect the QX49 via usb into the laptop, then load a vst (e.g. B3 organ) into Yabridge, and then have the resulting audio come out of the laptop's audio interface?

Yabridge is a bridge, not a host. You can run any Linux DAW/host with your keys then load some Linux nativeB3 organ. Or, if you really want it, use Windows VST/CLAP plugins via Yabridge inside the DAW/host.

If the Alesis QX49 Midi keyboard does NOT need a driver in Windows then it's probably Midi USB standard compliant and it does not need a driver in Linux either (because the (ALSA) driver is already in the Linux kernel). Otherwise: some features of your keyboard might not work or the whole keyboard won't work. You should ask Alesis about that...
If you learn how to use Jack Audio (a server on top of ALSA) then you can use 'Carla-single' to use a VST standalone like in Savihost. From my personal "help" text file:
Use a VST as a stand alone app? Use 'carla-single'. Works only with Jack/Jack-Midi. Use Qjackctl to connect the VST's audio OUT to your system's audio IN. Examples:
