I don't find out how to use Audacity as the wave editor. In Global Settings, I set up /usr/bin/audacity. But when I double clic on an audio part, Audacity is not opened.

If Audacity is in the path, which it should be, you only need to enter 'audacity' in the launch configuration.
Using an external editor for editing wave files requires that you first open it in the wave view. Which is what is opened when you double click the part.
From there you select the part of the wave you want to edit and launch the external wave editor from the edit menu.
A bit cumbersome yes, but it is not intended for general use (though it could be easier to launch).
Also, as Audacity wants to save it's own project files instead of directly operating on wave files, you need to use export from the File menu. Last time I needed a more powerful wave editor I settled on some other editor, unfortunately I can't quite recall which.
