A couple years old, data wise, but this video documents the making of a great DecentSampler choir library, "Winter Voices", a fine compliment to the SpringChimes sounds, birthed in an excellent volunteer competition effort. You might want to skip to 23:30 to hear examples of the sound, and if pleased, download and use it before watching the rest of the video, as the end result is far different from the many steps and labors that made it possible. The lib speaks for itself, and the documentary is quite light hearted and informative, and fills in a lot of interesting technical attempts with loads of charm. Lots of sampling hints from the Spitfire spokesman. Winter Voices is available for free utilising DecentSampler as the player.

My only regret about Decent Sampler is that the software (versus the various sampled instruments) doesn't seem to be FLOSS. I've suggested opening it to Daniel in the past, but without success.

AFAICT, it has excellent coverage of the feature-space of SFZ, along with UI improvements, as well as the (killer) ability to import EXS24 instruments. It is a pretty awesome "overtake" development effort.

You can open DS files with Sfizz. But whatever different sliders/settings like attack/sustain/etc/ the sample pack has is not exposed. Hopefully this will be added in the future.

I made a long and simple piece of hopefully peacefull background music. I slowly arpeggiated the above Winter Voices, and layered over sounds of wind and a stream. If you find yourself getting wound up tighter and tighter, you might like this, and it's very easy to make many such recordings of your own. I let the water and wind sounds run for about 8 minutes after the music fades out.
