@Havoc: Ok, that's what I figured. Some resources were vague in that SPDIF isn't limited by channel or resolution, but no one ever mentioned anything more than stereo.
@toddz: Focusrite Sapphire Pro line is my other option, but I have a hard time arguing with RME for the direction I want to go. I'm going to search out an original Multiface to save a few bucks, but I'm pretty sure I'll be investing in their gear until I can go full out pro quality. It just makes sense in terms of compatability, reliability, quality, support, and expandability. From what I can tell, for Linux users, they're unmatched. I haven't run across many "HDSP didn't work for x" posts when searching, so that's a good sign. AND people don't seem to be selling them... which is also a good sign, though bad for me. I briefly looked at Edirol, but for whatever reason didn't find a suitable solution that I was happy with.

Just got a mail from the guitarist of my band, he uses SPDIF to send out the monitoring channels of his 2nd Saffire Pro to the 1st Saffire Pro. And I know close to nothing about SPDIF too so in this case I'm just the messenger unfortunately.

Actually, that's very helpful. Sounds like the way to do it if TotalMix isn't any help there. I'll look into that if I need it in the future.
