The Berklee College of Music is running some free on-line courses. I'm doing the Introduction to Music Production course, which started yesterday

You can still sign up for the 6 weel course. There are a series of video lessons and quizzes to test what you have learned. The assignment for the first week is to prepare a lesson yourself on one of the topics, which is a little scary.
From the forum I can see that a number of open source users are taking the course. It is supposed to be independent of what DAW you use, but has audio and MIDI elements.
I'm learning a few things already, even though it is teaching fundamental principles. I have a few friends from a guitar forum doing it too, so we can compare notes. It's a long time since I did any academic course, but I'd really like to complete this one. Next month I'm doing the one on improvisation with Gary Burton.
