I use IR a lot on master or submix busses. For individual instruments I'm as likely to use Steve Harris's Plate Reverb.

I'd probably use IR. But since it's available only as LV2 and I use Rosegarden (can only load LADSPA) I ended up with C* Plate 2x2. Sounds good and is an all-purpose reverb in stereo. There is a mono version as well.
Tap Reverberator sounds like a digital delay, at least the LADSPA version that I have.

On most mixes I run two instances of IR, using the Bricasti M7 IR files. One is set to a warm room sound for the drums (since most home-recorded drum tracks I get don't have much of a room sound), and another set to a plate.
My 2nd choice is the Harrison Gverb+ plugin. They improved the open source one or something. I think that one only works in Mixbus though.
I plan to start playing with the Fons reverb soon, and I plan to purchase the LinuxDSP reverb when I have more cash.

yep, Bricasti M7 IR files are my favs too. the backend to IR is Fons's jconvolver. Yes, you got it wrong. Did I get it wrong?
1 instance or IR outputs stereo. And if you have the good IR files, like the Bricasti ones that I use, they are actually qudraphonic IR files, and IR and other IR reverbs process that down to a sophisticated stereo output image.
