You can easily activate systemd, but I think using Pipewire with Debian 11 is still not a good idea. There's a big thread in the MX Linux forum.

For audio output of applications I'll try to write a script so I don't have to that manually each time.
Together with a jack connections file all the audio routing should be saved to be used next time.
Does pipewire require systemD? If so, it's never coming here
No, it doesn't but I guess it depends on how it is packaged in your distro. It's required on arch but gentoo and debian don't necessarily need it:
