I've managed to get quite a bit understood yet there is one thing I cannot work around.
Every time I try to change the patch (either by entering High:Low:Program or clicking "patch name" it get's reset on rewind to --:--:1. I have imported the midi file from a download site so I would imagine that it came with a default instrument/patch (Not sure of the terms, how do I change it? How do I get my choice to stick....

Hi!
You can see all MIDI events in your track by selecting the part and select Edit > Event list (or press Ctrl+L). If there is a program change in the part you can select and delete it.
You can try to go through my synthpop tutorial to see an example of the workflow in MusE: https://github.com/muse-sequencer/muse/ ... p-tutorial. This tutorial is very sequencer/step programming-focused, but maybe that is not how you create?

Thank you so much that's was exactly what I was looking for and suspected was embedded in the tracks.
