Long story short, it turned out that the "output 1" jack on the rear of my Behringer UMC-404 is broken. Sending audio to output 2, 3 or 4 worked. But it was in the last place I looked!
It's fine, I wasn't using outputs 3 and 4 anyway, so I can use those, although I am now slightly perturbed by the lack of symmetry.
However, before I figured that out, I was baffled because it was acting a bit like it did when I was having problems earlier with Fedora - a little glitch of sound would come out occasionally. I checked the cable. The cable was good.
I got this device used and had mostly been using it with headphones up to now so I can't honestly say if it arrived this way or whether I managed to break it myself.
Hardware debugging... sigh...

Have you tried cleaning the contacts? It could be some dust or fluff.
