I just discovered this module through an incident. Percussa - Super Signal Processor (SSP) https://www.percussa.com/
This is a GNU/Linux under GNU Affero General Public License v3.0. https://github.com/percussa/ssp-sdk/blob/master/LICENSE
I find it funny, though not cheap. ;-)

Do you know any other modules or ~instruments that use GNU/Linux?

I think some of the Roli gear uses embedded linux,
and saw Omenie Synths on google.

Nonlinear Labs C15 (Only the MIDI control is GNU/Linux.)

Now everything is with Linux and thus has 24 voices and 2 layers ... as well as MIDI I/O on the device.
