IR loader

I've never played with the RPi, but I had an idea recently for which it might work: I wanted to use it as an impulse response (IR) loader.
The idea is to connect it to the record out of my amp and use it simply to load an IR and send the signal out to the PA. I could use either IR.lv2 (http://libremusicproduction.com/tools/irlv2) or x42 convoLV2 (http://libremusicproduction.com/tools/convolv2). (Or anything else, if someone has any suggestions.) That's all I need.
Now, the problems: it needs to run with low latency, as I'd use it live. Also, those are plugins, so they would need to run in some host. (Carla? Anything else would make sense?)
Finally, I'd need to run it without a monitor live. (I could connect a monitor to set it up at home, of course.) Is there a convenient way to check it (i.e., settings, the plugin host, the IR loaded, etc.) without a real monitor in a gig?
It would be OK to take my Focusrite 2i2 to use with it. (In fact, I assume I'd have to, no? Any chance I could take only the RPi?)
