An openFrameworks / Juce based project. Looks amazing though Mac focused at the moment. Can anyone advise if this could be built for Linux?

Even though there is some juce inside, there is also nanovg, glew, openframeworks, and other stuff...
Also despite having juce inside, the code is not using juce classes to handle plugins, but doing a custom VST host implementation.
From this I guess juce was late addition to the project.

Anyway, regarding your question, there is quite a lot OSX specific code in there.
I don't think it's going to build for other OSes right now. Wait until the author at least supports MacOS and Windows, then we can see what can be done.

Not sure if it works the same way but looks a bit like a fancier version of sunvox.
Anyway, looks quiet nice!
You can always create an issue about Linux support.
