Is there any reference for ending up with a setup suitable for pro audio (that can also run some windows vsts hopefully) starting with the latest ubuntu lts release?
Yes there is ubuntustudio but I want to stick to the default ubuntu.

A guide, I don't know. Although I run Xubuntu 18.04 LTS with Windows VST in such a way that it's not too bad.
At least install the provided low latency kernel from Ubuntu. Then check some usual stuff like belonging to the audio group, etc... which is not specific to (X)ubuntu.

All you need is united in the package ubuntustudio-installer. It is DE Independent. You can find it with a simple search in gnome-software
