Lilypond is the best music engraver for Linux, but very few people can work with the input syntax without using a GUI frontend like Rosegarden, Noteedit, Denemo, or Canorus.
But GUI frontends usually don't support 100% of all the features that a text-based program like Lilypond has.
There are alternatives. I use Mup ( http://www.arkkra.com ). This produces great scores, yet is slightly easier to learn than Lilypond. It's shareware, but not expensive. Rosegarden can export Mup scores, and Notedit's native fileformat (.not) is based on Mup and can be read and processed by Mup.
I prefer working with a plain texteditor (I use Vim. You can use any editor you like.)
For very simple tunes with lyrics and guitar chord symbols ABC works best for me. I use abcm2ps and abcMIDI to print out scores, and listen to MIDI performance of the songs (including chords !)
