The Perseverence rover has a Linux box running ffmpeg to process video. They just announced that in the NASA presentation. They gave a nice shout-out to the open source community. Go Linux!

can't recall all rocket science details...but there was something about the preempt patch for the kernel and IIRC they don't use a real time kernel because Mars and moonbeams and stuff
