I was talking to a friend about music production & he uses a windows workflow. Does anyone know of a good web page that gives a basic explanation of how & why to make music in a FOSS environment?

Website? Dunno. I too am interested to hear any recommendations here.
For an intro and general overview to FOSS music making, I'd recommend the AVL6 manual.

Of course, make them aware of KXStudio and Dreamstudio etc too
They should then have a play with both Ardour and qtractor, decide which suits them best then read the appropriate manual if/as required. The qtractor manual is linked on its homepage and then http://en.flossmanuals.net/ardour/ for Ardour.
