Ardour Questions: How to start with right start screens?

Ardour doesn't initialize by showing the startup screen/window with the options that allow one to use Jack and what sound card to use, it automatically bypasses that step. So I want to ask, how can I set it to do so every startup? I don't find an option in the configuration settings inside the program, and I've looked.

If you are running jack while ardour starts it automatically uses jack.

You can also disconnect and reconnect to JACK (and/or from/to ALSA) after you start an Ardour session. It's a menu item called "Audio Engine" or similar.
