Do you want a general linux distro or a music-production oriented one? For general I suggest Mint, for music, AVLinux. But really there are many choices, that are fairly similar. Also note you usually can make a bootable-USB stick to boot into a linux system and try it out before you install it.

I think most Anrdroid phones have a single mic. If you want to record stereo you need to get an external stereo mic. Google "android stereo microphone".

Its not weird that it works with plugue. Plogue is commercial software and supports many more sfz opcodes than any open source sfz player. Many commercial sfz files recommend using plugue. These seem to be related to "acpi" = Advanced Configuration and Power Interface. I tend to think these processes should not use so much CPU, but I don't know what you can do about it.

Its not normal to use a large amount of CPU permanently. Run the "top" command in a terminal to see what programs are using so much cpu (exit top by typing "q").

AVL-MXE is not exactly a one-man show, its is based on MXE Linux and uses other repositories like kxstudio. Also, the maintainer has a 10 year record of updating AVLinux, though of course I can't predict the future.

I notice this is based on HiFi-LoFi FFTConvolver which is also used in KlangFalter, also from HiFi-LoFi. So it would seem to be mainly be a repackaging of KlangFalter.

Since you mention you have a Yamaha keyboard I don't see that you need VMPK. Just connect your Yamaha keyboard via USB midi (if it has this) to whatever synth, sampler you have. I only use VMPK if I don't have a real keyboard set up, and I want to test a synth. Concerning Pianoteq it is downloadable...

VMPK by itself does not make any sound, see https://vmpk.sourceforge.io/ . If you want to make sound you need to send your midi data from you keyboard (or from VMPK) to a sampler or synth.
