Welcome inigo! It might be a good idea to setup one of those machines with a audio focues distrobution. 64 Studio is based on Ubuntu(Ubuntu is based on Debian) and AVLinux is based on Debian. That would pre-install a lot of really good audio applications and be configured to handle audio really well...

What issues are you having with Audacity? If I recall correctly, version 1.2ish had problems with pulseaudio if present. I share a home folder for 64 Studio 2.1 and Ubuntu 9.04 and it works okay. The first time I went from one to the other, all my panels were messed up, but once I set them up again, they were okay.
