To put it simply, Calf fluidsynth and qsynth are sf2 players and they expect you load at least one soundfont file into them. If said soundfont is a GM, such as FluidR3_GM.sf2 (which you have installed via fluid-sound-gm package), you will get the desired GM player with both Calf fluidsynth and qsynt...
