If you want, you can use your laptop as default interface, and use alsa_in / alsa_out to make additional jack interfaces, and route sounds like you desire in qjackctl / patchage / whateverappyoumayuse.

That would nearly work, but linux sampler is not a plugin, or can it be used so that all settings are in DAW project? It can be used that way. I have several projects that use Linux Sampler. You can have that amount of control with Linuxsampler and your text editor of choice.It's not too complicated to create SFZ-soundfonts. samplv1 is just for one sample, and what I would want is to have multiple samples overlayed on same tone, and several samples on different pitches. So with samplv1, this would require dozen instances, and then putting suitable notes to piano roll of that particular instance. Doesn't sound feasible, ...

There's no Wine staging in Ubuntu/Mint.

Wine staging is from winehq for all distros.

LMMS is indeed great 'all in one' solution, easy to start.
If you are working with some other DAW, and just want synths with plenty of presets, ZynAddSubFX and Surge are free alternatives, and U-He has great non-free (some of them with zero cost) linux synths.

Linux has some drum machines and drum samplers. What the OP wants is a robot drummer. The only software I can think of is Backup Band : https://www.linuxmusicians.com/viewtopic.php?f=24&t=19563 I've never tried it, but apparently it does have robots. I have tried, it is great, but not for this....
