pkg-config is a program that helps compilation. You can install it in Ubuntu like this (I hope):
https://installati.one/install-pkg-config-ubuntu-20-04/

I also see from your log that you will need to install jack2 and jack2-devel.

The best solution I have found until today is Patroneo, but it seems that Patroneo can't be tansport master under jack and synchronize the midi clock among multiple synths. The timing is always off. Patroneo Author here. I am unware of this. In my tests Patroneo is used as jack transport master and...

Linuxsampler is not FOSS and liquidsfz is just underdeveloped. The errors and warnings have nothing to do with with piano itself.
