It might depend on other config on your machine. I would highly recommend rtcqs
as a diagnostic: it not only flags stuff which might be problematic, but points you to the right place in the docs to understand what it means.

At least on debian proper it is not necessary to upgrade the whole system to testing or unstable. A relatively recent version of pipewire is installable through the backports repo.
Hmm, I looked for it in backports and failed to find it. Likely PEBKAC. Thanks for the steer!

I have some memory that the Korg NanoKontroler2 setup makes a distinction between "momentary" and "toggle" modes for some buttons. Perhaps a quick look through the manual for those terms would enlighten?

SFZ opcodes by design. These two opcodes are required to have different per-channel sample selections in a given patch See this discussion.
