I don't know of any direct way to do that. What comes to mind is that there are many ways to control VLC remotely. If you're that kind of person, it shouldn't be too hard to cobble together a script to translate from MIDI to VLC API.

You don't need to run all your MIDI through the interface. You can plug the USB instruments directly into the computer. Then you can use qjackctl (or whatever you're using to configure JACK) to route the MIDI signals. If you're low on USB ports, you can use a hub for the MIDI instruments. Just avoid...

It sounds like your FTU is working fine, but PulseAudio is making the assumption that 8 channels must be a 7.1 surround system. I haven't had to deal with this myself, because I don't use multichannel interfaces with Pulse (just JACK). I remember a discussion about this somewhere, but I have no idea...

Ardour from v 4 and up lets you choose between JACK and direct ALSA connections. Are you sure Ardour is set to use JACK?

Also, multiple versions can coexist on your system. You can keep the old version around for the old, finished projects, and attempt the conversion when you want to use new features in an old project.
