If anyone is interested in how I got the 5.6 version of Kontakt player to work then I could not replicate your success with either Kontakt 5.5.2 or 5.6.6 on Ubuntu Xenial + KXStudio. Anyway it would be nice to be able to keep 5.5 around for a while, if you took it down, until 5.6 kinks have been ironed out.

I can confirm this. Furthermore, it appears 5.6 has some issue with midi note off messages. I've tried to roll back to 5.5 but it doesn't seem to be available in the repo, at least apt can't find it in the cache, but my apt-fu is admittedly lousy.

For the sake of posterity, a problem like this on a Samson Carbon 61 has been found to be caused by faulty firmware. Be sure you update it to the latest version which fixes this issue.
